Ok, so went to wendt farm and got purple hulls and the sweetest corn I’ve ever had. How dpi you guys freeze the corn. Mrs wendt said to freeze it in the husks. Tia. Creams in next week.

It is ok after you freeze it but not nearly as good as when it is fresh. The crunch is gone when you freeze it. The peas freeze well. Just portion them and vacuum seal them. We get enough to last all year. His corn this year is the best I ever had as well. I took a bushel to the Chamber Board meeting today and gave it out.

Ever heard of freezing peas in a pillow case? No blanching, just freeze them and break off what you need for supper.
Blanching corn needs to be done properly to kill the enzymes that cause the rotting process. Check with your county extension service for the correct times. I think corn on the cob is around four minutes.

I usually buy a dozen ears at a time. After boiling completely, eat what we want then, and cut the rest off to put in ziploc bags. I add some water to each bag, then squeeze out all air and then seal.
Put in the refrigerator for about an hour, then move to the freezer. Make sure bags are as flat as possible when you put in the freezer. I use cheap sandwich baggies, but after they are frozen, put them together in a gallon freezer bag for more protection. I have frozen it for up to 9 months. Thaw in hot water while in the bag.

if the corn you buy is not too good, don’t freeze it.

I am too cheap to buy a vacuum sealer. What I do is the frugal vacuum seal. You can do the same with fish filets. The water keeps it from significant freezer burn.

If you want to keep fish filets frozen for over a year, use a cut out gallon milk jug, and after your fish&water is frozen, add another 3/4 inch of cold water to seal and freeze. A friend taught me this. He froze fish in milk jugs for over 2 years.

What i do-
Short term freezing for corn-leave in husk, cut off each end of cob, pit in freezer ziplock, mash air out and put in freezer. This method is good for 10-12 weeks IMO. You can pull them out and put directly on grille or shuck and boil.

long term corn-shuck em, clean silk off, cut the ends, put in pot and bring to a boil for 4-5 minutes, pull all them out and put directly in cooler full of ice and water for 5 minutes. Put in ziplock with water and freeze. These are for 3 months or more. When ready to eat just remove ziplock and put block in a pot and boil with whatever ingredients to your liking

peas do the same as long term corn
