We cleaned a grouper that sounded like "carbureted grouper" that had been caught by commercial fishermen in deep water. At least that's what they said it was. I had never seen one before.

 

Just put some tabasco on it. It'll be alright.

 

Actually it's a Bonita caught from a car on the fishing bridge. Hence the name carbonita.

They sell Swai here and call it catfish. It is loosely related so they can get away with it.

Black grouper, carb, carborita = same. That's what we called blacks growing up in Clearwater.

 

Cool don't know why they wouldn't just call it black grouper I would have ordered it then.

 

I have seen it before. I always thought it was the recipe, not the species...

 

Don't ask me why, but back then reds were reds, gags were blacks or coppers and carbo's were true black grouper. Just regional slang I suppose.

 

Maybe he misspoke and it is Grouper Carbonara. Carbonara is an Italian cheese sauce used primarily over pasta. I'm sure it would be amazing on grouper too.

Yea I make fettuccine carbonara all the time, it's delicious!

Grouper22 hit the nail on the head. It's what "Black Grouper" are called in SW Florida.

Funny thing is Gag Grouper are often called "Black Grouper" down there. Mingos (Vermillion snapper) are called beeliners, Black snapper (Gray snapper) are called Mangove snapper, etc....

Never heard of it, but looked it up the way "22" spelled it.

 

At a restaurant right now in Navarre and one of their fish of the day meals is carbonita grouper which the server told me is closely related to black grouper. Never heard of it and am always cautious of fish I have never heard of because it is usually Vietnamese catfish.

Its actually called a Carberita and it IS a Black Grouper just another name for it.

after 9 years i'm gland someone finally cleared that up. i've been looking for a black groupie up here in selma.

With global warming going at the rate it is, they should be up that way and no time...
Now if you'll just keep that avy girl of yours out of the water, that should help the sea levels stay a bit more normal.
