Depending on how much you boil, but want a good amount of water over them so they can role when boiling. Also salt is key, you need more than you would think. I think a good bushell took us a couple of hours to boil. We used a Crawfish pot with a strainer basket.

It is way to late for Green Peanuts...usually around Sept-Nov. Most farmers have all the peanuts out of the ground and either dried or sold off by Nov. You deff need Green peanuts to boil other wise you are wasting your time.

Ultralite can back me up I am sure, butthere is aguy right before the intersection of Sorento and OGB hwy - near Grays Tackle. He boils some mean peanuts and sells beautiful vegetables cheaper than anywhere else. He sells it all out of a pickup truck that is permanently parked there. It will be faster to drive out there than boil your own. He has spicy and regular.

i forgot about him, he has good peanuts too but, i do think the one i was saying is a little better...i love those things and so does my daughter...we had a man roll his wagon around and probably still does at Myrtle Grove ball park for years selling them...wife is from VA and they only eat dry roasted...she finds the boiled ones repulsive...i'm like "well, more for me"...

That is funny you say that. Everyone that I have ever met that is not from the deep southeast thinks boiled peanuts are gross and really are repulsive. Then you ask them if they have ever had one and they say no...I am with you Ultralite...more and more for us...:letsdrink

You can get green peanuts at the Farmers Market on Davis Hwy. Add peanut cover with water. Boil for three to four hours. Until the right tenderness you like.Turn fire off and add salt two cups of kosher for 15 #s. Add cajun seasoning if you like and two teaspoons of crushed red pepper flakes. Call me when there done I'll help you sample them.

Drinking beer while making peanuts is key. Usually after the first case is gone the nuts are about 1/2 way cooked. Tabasco is an ingredient that can't be left out. Lots and Lots of tabasco for some kick azz peanuts. Franks Red Hot also gives them more of a sweet heat:hotsun

I have seen people going crazyover these boiled nuts, so I tried them. Man, I couldn't get them things out of my mouth fast enough. I tried different ones with different spices, and still yuck!! I'll eat just about anything, but I'll have to stick to roasted. And yes I am from Kansas.

I go to Jay every September and get 100 lbs of green peanuts at Holland farms.I like the first ones that comes in as they come out of the shell easier .He has them for about 3-4 months, picks some every day, he has a really good set up. Usually has 2 different varieties. I use to boil them before putting them in freezer, but found out, they do better to just bag and freeze .Use as wanted. I like to eat them while they boil, so I like them kinda hard, but they do taste better if you cook with lots of salt, then have enough water to let them set, several hours after cooking. Some people like them spicy, I just put salt . But its my favorite snack. You can get them less expensive at the farm, but it is a long drive for me in Navarre, 65 miles around trip, and with gas over $3.00 a gallon, I make sure it get enough to make it worth while.

I grew up in Jay. It ain't rocket science. Strong gas cooker, water, salt and fresh peanuts. Other than seasoning them like you want, how damn complicated can it be? Hell, we were brought up on boiled peanuts. You can try to pass off a bunch of fancy recipes, but, water, salt and peanuts. Boil till done, (you'll know when they are), cool and eat. Only little trick I know of that isn't normally practiced? Icing them down when the nut is done and constant sampling till it is spiced as you like. Makes the seasoning soak up really fast. Cuts cooking time wayyy down. Same way you do crawfish or shrimp.
