Most would consider it a budget set up but I like my Penn Fathom 25N and ugly stick tiger jigging rod (I believe I have the stiffest model they make).

I have a Penn BG 6500 with 80lb braid attached to a Diawa Saltist rod. I've caught a 100lb yellowfin with it and several AJ's in the 60-70lb class. Inexpensive and does the job.
I also have an Avet HXW with 80lb braid and a Hopper jigging rod for conventional.

Those Hopper 400 gr rods are a blast

If you REALLY want to have a blast...match that lightweight Hopper rod with an Avet SX. It's tiny but an absolute beast! I have one of the SX Raptor models and it not only is great for jigging, but will cast a mile with near zero backlashes (it casts better than any of my bass reels). I paired it with 65lb Max Quatro braid which is as thin as most 50lb braids. I can hold 400 yards of line and this reel has 26lbs of drag....enough to handle most any AJ you run into.

another option, especially for grouper in waters over 400 feet, you may consider an electric reel and put it into jigging mode. Not certain of your age/health but jigging can wear you out before you even start reeling in a fish if you do it properly.

Saragoosa and whatever rod you prefer to match I have a custom build rod that's my favorite all around spinning boat rod and i am also a big fan of the terez rods.

If you want conventional a torsa if you can find one if not Trinidad 16n or 40n also a little hard to find but great reels

I am not a fan of the avet reels personally unless it is a raptor

I am leaning toward one of the avet raptors in a smaller size and one of the hopper rods. While electrics are great, they are not for me.
