The jay peanut festival is next weekend too. They don't have much in the way of peanuts though, ironically. It's fun for the kids and I usually get a sack of green peanuts from there and boil em up at home. Anyone else going?

I usually go to the Peanut Festival with my dad. He loves looking at the tractors and reminiscing.

I was over 50 before I decided that I like boiled peanuts. Love em raw or roasted.
I like listening to the hit or miss engines they are cool

Not to derail the machinery conversation, but how long do y'all boil the peanuts for? Last year was the first time I boiled, and it seemed like it took forever. Any hints ?
Till they're done. Not really a good average time really. I have had them cook for short times and long times. Depends on how much you do, how green/dry they are etc... It's part of the fun to sit around checking them for softness and saltyness. I am going to have to get me a bunch to do up soon. We'll be up at the Jay peanut festival too.

peanuts

I pressure cook them. I have never cooked the large because I think the small ones are better. Put in the pressure cooker, salt on top, then cook them for 30 minutes after they start the noise. Cold water cool and put back on the stove on low for about 30 minutes to get the salt level to your liking. It works great for me and don't have to spend 3 or 4 hours fooling with them.

Like the small ones myself. Big pot. 20# or so. One box of salt per 10#. Boil for a couple hours then start sampling. If done and you don't want to wait for salt to soak in, dump a 5 gallon bucket of ice in. Peanuts will suck up the seasoning. Works really good. Careful as it will overdo it. Must continually sample. Same for cajun boiled ones.

Place is in Silverhill near Robertsdale and has the Super Jumbo's through November. Huge peanuts!
I boil mine until tender and let them soak over night most of the time. Plenty of salt, and crab boil works good also. Taste the water to check seasoning.
I buy about 100 pounds a year and boil what I want and freeze the rest green in the sack they come in. They will freeze well for up to a year green, or you can boil and then freeze them. Going to ride over in a week or so and buy some.

Ahhh, I didn't know I had to soak them. Thanks.
It's not necessary, but they'll take longer to cook if you don't. I don't when I cook them. I don't have the patience to wait a whole night before cooking them. I rinse them off really good with the hose, then do a "cleaning" boil with just salt and water for 3-4 hours. After that I add the spices/salt and boil for a while longer`.
