headed down this weekend to fish destin area. surf report is calling for 3-5ft swells. is this too rough to fish?

Yes, it will likely be too rough, but piers may be good, though VERY windy. SE Winds will push the spanish and king mackerel in and hopefully Cobia.

Fishing this weekend

Fishing should be good this weekend with the warming water temperature and the SE wind which will push migrating pompano West. The wind and surf should be up which is excellent for pumps . Low tide is 6 AM so fish will be on the outside of the second bar (far side of the most distant sand bar ). Find a beach with good water clarity and the fish should bite as tide begins to rise in the mid morning. As always it's fishing so anything could happen.
