In a yak the size is relative. I fish shallow water in the bay, so I use a 4 lb hunk of lead (made from a beer can) and it works just fine.

Out in the gulf I think the smallest "dig" anchor you can find would work.

Saw a guy out there with an anchor windlass of some sort, manual type with 500 lb line not rope, and he seemed happy.

He was 5 miles out on a paddle kayak. Arms of steel.

Get a small folding claw anchor, 2 - 3lbs is plenty for inshore. Tie your anchor line to the bottom of the anchor, then zip-tie the line up at the top of the anchor shaft. That way if you get hung bad, you can pull till the zip-tie breaks loose and the anchor will come out backwards.
