made a trip this morning with the first mate and picked up a cheaters slam, sand trout, red and flounder. after cleaning the fish, i decided to try a new fish cake/ball recipe that a friend gave me.

cook fish in olive oil till flakey
add a tbs of MAYO
2 TBS DIJON
1 egg beaten
6 tbs bread crumbs
1 tbs lemon juice
1/4 cup green onions chopped
2 tbs capers chopped
3 tbs chopped parsley
3 dashes of tabasco
2 tbs old bay
1/8 tsp each of salt and pepper
2 deveined jalapeno chopped
roll into balls or cakes and coat with more bread crumbs
bake at 350 for 30 min.
best recipe i've ever done for these things and i've been playing around with recipes for about 3 yrs.

Sounds and looks good..I may have to come down there again and get some of those fishes. We were there over Thanksgiving so I'm due another trip soon. Last time we stopped by Hillmans on the way back and get a sack of them oysters. Didn't wantto leave empty handed. Mmmm!!

i caught those fish down current from about 10 oyster boats in West Bay. went back out a couple hrs later with a friend and couldn't buy a bite.

Usually that's the way it happens. I've come home with a limit, show pics to friends, being them along next time....and nada! Like you said, couldn't buy one!
