Today my youngest son turned eleven (11) years old, and thus was entitled to pick his choice for dinner.
I tried to get him to choose some nice fat Rainbow Trout at Publix, but he went for the steaks... Great choice!

So dinner tonight was:
Hickory Smoked/Reverse Seared NY Strips
Grilled Asparagus
Rolls -n- Butter
Birthday Apple Pie in lieu of cake

NY Strips spiced with SPG



Into the CCSV24 with plenty of hickory



Hitting internal 120' temp and ready for the cast iron



Getting a crust on, and going to 140' internal temp for Medium Rare



Grilled Asparagus



Pure Beef pRon

Wow. Reverse sear is the way to go. Nice thick steaks and good times.

Out freaking standing looking spread chili! Though I'm gonna side with your son, trout is good, steak better!
Steak is great, no doubt about that.
But fresh fat Rainbows grilled to perfection with some Cherry smoke and almondine sauce :notworthy:

It is indeed, it is the best cooking method for steak I've tried
And yeah, you need a thick steak to do it right/effectively.
At least an inch thick, and thicker is better.

How are you not as big as a house!
Because there is Mon, Tues, Wed, Thur and Friday in between Sat/Sun, and I normally only cook on the weekends. ;)
