Went out for a couple hours this morning. Got my a$$ handed to me by a bunch of lady fish. Managed to get one really nice pomp on fiddler under a float.
Tried a new recipe. Best pompano I've ever eaten. Marinate in a mix of celentro, tomatoes, sweet banana pepper, melted butter, olive oil, garlic powder, salt and pepper. Cooked in a dish on the grill at 400 for 20 minutes. Stuffed a ploblano and a banana pepper with smoked pompano dip. Added some cut peppers and tomatos spayed with coconut oil and salted. All cooked together.
Best fish dinner ever. Left the wife speechless.

I like it, makes me think of some sort of Caribbean style chimichurri or what not.

Pompano is such a wonderful fish. The wife and I are always looking for different ways to prepare it. The cilantro butter flavor was the best combination I've found so far.
Smoking it and making a dip with ranch, mayo, wasabi sauce and garlic is the bomb also. The dip is fantastic loaded into a pepper and roasted. Jalapeno peppers picked of the plant when they turn red is the best.
