Came down from Chattanooga for the tourney. Launched from Fort Pickens to what turned out to be a perfect day. The early morning was a little rough but then it smoothed out perfectly. I caught four nice Spanish on live and frozen cigars in about 25-30ft of water but nothing big enough to make a difference in the tourney. They did however make great tacos yesterday. Went to destin on Monday and launched from Miramar beach, I sabiki'd up a few very large cigar minnows and threw them out on a naked king rig. After about 30 minutes the reel was screaming and I landed the biggest king I've ever caught. It was a great day, it made my whole trip since there won't be anymore fishing due to the storm.

Heres the video. It turned into a little bit of a sh$t show at the end. I didn't want to gaff him because I was going to let him go but the stinger was so deep that by the time I got it loose he was struggling so he came home with me. He's bound for the smoker / fryer. BTW I bled him before I headed in and then got him on ice pretty quickly. When we cleaned him his meat was nice and opaque, I took two chunks and fried them with the Spanish for tacos and it tasted great. So don't listen to people when they say they're trash.

It sounds like your bleeding technique worked well enough, but I've found that the best way to do it is while they're still kicking. I grab them with the lip grip like you did and then cut into the throat with the knife I keep clipped to me. You'll know when you hit that main artery. I then just let them hang in the water till bled out. I've never had one that tasted too strong.

That's kind of what I did except didn't go straight across the throat I went into both gills pretty deep. It left a large enough blood streak that I was waiting for a visitor to come take him out of my hands.

Nice catch! If you keep the meat on ice from catch to cooking process it is very firm and flaky Tip # II, Tip # I always bleed immediately!

That is a huge king, congrats!

For what its worth, ive never bled a king. I always just throw them in the cooler and I always grill them within a few hours. They taste fantastic on the grill even without being bled. I do however carefully remove the bloodline and any tainted meat. That being said, I am hesitant to try and eat it the next day so I just use whatever is left for chum or shark bait.

I've consistently heard that it doesn't so I didn't freeze it. Last year I did freeze some for some friends that were visiting and they didn't have any problems thawing and cooking it.

As long as the blood line is removed, they keep well frozen in vaccum bags. Olive oil, salt and pepper is my go to. Love me some King Mack.
