Default Swine-apples

I gave these a shot. It worked great. I won't do it this way again (too much pineapple). Next time I will knock the side off of a pineapple and top & wrap.

Step one. Boneless ribs cooked 100%.

Step two. Cut tops and bottoms off pineapple (reserve them for later). Skin pineapples. Cut in half from top to bottom and carefully cut out the cores.

Step three. Stuff pineapples with cooked rib meat.

Step four. Wrap pineapples with bacon. Secure bacon with tooth picks. Replace tops and bottoms of pineapples, holding them in place with two 12" skewers.

Step five. I grilled on offset heat at 325 for 30 minutes. I spritzed the bacon with apple juice to keep it from drying out.

Remove the leafy tops so they won't burn.
I seasoned the pineapple with Tony's. I seasoned the bacon with Paul purdohmes (sp) seafood magic.
