I got into catching the crabs this year down in bon secour.
I've been meaning to learn how to make the stuffing.

This was my first time trying these, so I kinda winged it and learned some stuff. I'm only posting ingredients, since I never keep up with amounts.

I boiled the crabs for about 5-6 minutes and let them soak for 20 minutes or so. Might have been longer, I don't know. A few beers worth.
Didn't have any crab boil, so I kinda made up my own. Wasn't bad, just not spicy.
Celery seed
Mustard seed
4 or 5 bay leaves
Crushed red pepper
Whole peppercorns
Chives
Salt
Lemon juice

While they were soaking I sauteed up some celery, onions and peppers. Set them to the side.

Whisked one egg and then added the trinity and some bread crumbs. Cleaned the crabs and folded in the meat. Scraped the shells clean and rinsed them. Added the stuffing to the shells and sprinkled some smoked paprika on the top. Threw them in the oven for about 20 minutes at 350. In hindsight, adding some chicken broth or a broth/white wine mixture before tossing in the oven would make them a lot moister. I'll try that next time. I might have forgotten something. If I remember it, I'll add it in.

Okeydokey, those are looking mighty divine.
Tell ya what, I'm throwing this here shoulder on the smoker at about 5am.
When its done you bring the stuffed crabs and I'll supply the pulled pork and fixins.
We'll eat like kings... What say ya?
