Default Smoked Dove

Ok fellas, I've got about 25 dove soaking in dales to be cooked this afternoon. I'm gonna grill half and smoke half. I need some smoking recipes for dove.

Cream cheese and jalepeno's?
How long will it take to smoke a dove breast?

I have a masterbuilt smoker and think I have hickory, mesquite, and apple.

Dove breasts have little fat and moisture on their own, so keeping them from drying out is critical. I've never smoked them, just grilled bacon-wrapped.

Post how they were!!

Too small to smoke...grill em with jalapeņos, cream cheese and wrap with half a strip of swine. I do some with a touch of sweet baby rays too. Pretty fine.

Yeah I'm gonna grill half of the breasts with them wrapped in bacon. Thought maybe the other half smoked would be ok if I stuffed with cream cheese and a slice of jalepeno wrapped in bacon.

Oh, that sounds good. I have some baby rays so I may do a 33/33/33 combo with what you just said. See how they all compare next to one another.

Try a water chestnut between two breast halves with the bacon wrap. Adds a little texture and flavor.

They were just "meehhhh."

I cut my bacon in too short of sections right to start with and that screwed it all up. Ended up being more of dove kabobs lol.

The jalapeņo and cream cheese was good, but what isn't good with jalapeņo and cream cheese.

They make the best gumbo. Cook all day until meat melts. No more dry meat, and brings out their rich, mild, flavor.
