Default Shrimp Scampie/Flounder leftovers docktored up

the wife made a shrimp scampie dish Wed night and we had quite a bit left over, so i thawed out some flounder filets, dusted em with flour, bathed em in an egg wash and rolled em in bread crumbs. then pan fried them in EVO. wanted to add garlic, but the scampie had enough of it and i was scared it would be over powering. any way, heated up the scampie and topped it with a flounder filet.

Looks great! I added blackened grouper filets to my leftover courtbullion last night, I think it was better than the first time around lol
