Default Quick and easy supper

Fired up the fryer. First time in quite a while. It was worth it. Catfish, okree, fries and cheese sticks. Fast and easy supper it is....

Everything looks great! give me some tartar sauce and I can guarantee you none of them catfish will escape! well done sir!

Had some of my homemade tartar sauce with it. Twas fine indeed...

Tartar sauce....

Two Shallots
Two lemons (juiced)
Two heaping teaspoons of capers with juice
1/4 cup of Wickles relish
1/4 cup of diced jalapeņos
1/4 teaspoon of cayenne pepper
heaping teaspoon of chopped parsley
Better part of a jar of Hellmans mayonaise

Chop shallots up coarsely. Put shallots, relish, capers and lemon juice in small food processor. Blend till all well chopped up. Put in bowl. Add parsley and pepper, mix well. Add about 3/4 of a regular jar of mayo of your choice. Stir well. Let stand in fridge overnight. Serve. Keeps for a month easy.
