Default need suggestions for sauce

made a baked breaded flounder filet with parmasian cheese topping over angel hair pasta with a sauce made from a basic trinity with sausage, tomato and a can of tomato soup. wanted to add mushrooms to the sauce, but bailed on that idea. everything was good, we cleaned our plates, but the sauce was too sweet for my taste. any ideas---Chili? we talked about doing a white sauce, sort of alfredo. i duuno. trying to use up some of the flounder we've been catching. the flounder run is right on time this year.

Lemon caper dill white sauce
1 tablespoon chopped fresh dill
1/2 cup sour cream
2 tablespoons capers, drained and rinsed
lemon, zested

thinly slice two onions. put down layer of onions, layer of fish, then other layer of onions. stick of butter in a coffee cup with old bay. nuke and pour over top. bake 12 minutes then add parm/romano then brown for 3. put that over your angel hair.
