Default Grilled Chicken, Broiled Yellow Squash...

Grilled Chicken, Broiled Yellow Squash with Rotel, Rice and Blueberry Muffins with Butter


Spatchcock the birds and rub with EVOO.

Generously rub with Sea Salt, Garlic Herb mix, Paprika and Rosemary.

Grill till it starts falling apart.










Halve the squashes, brush with EVOO.

Dust well with Seasoned Salt and then top with Rotel.

Broil on high at about the 4th rack level till squash softens, then raise to about the 2nd rack level and get a roast on the tomatoes & squash.

That's about the best looking chicken I have seen off the grill. How long did it take to cook? I have trouble with timing a half chicken and I sometimes end up with it being a little pink inside but looks done on the outside. Different food compliment with the blueberry muffin. Would not have thought of it.

It's not about timing, it's about internal temp in the breast.
Get yourself a decent meat thermometer.

The muffins were dessert, but look good in the pic.
