Default Gonna give it a shot

Gonna give the pellicle a shot. Did a little reading up on it and figured sure, why not. Rubbed the ribs down and just put them in the fridge. I'll pull them out in the morning and slap them on the Egg. Couldn't decide between spare or baby back, so pulled both.

I'll be doing this again. I don't know if they'll cook up any better, but leaving them open in the beer fridge has produced this lovely aroma filling up the garage. It's like potpourri for men.

I've found that rubbing ribs the night didn't affect the flavor a noticeable amount, but if the rub has a lot of salt it could dry the meat out. Of course, this was also in Arizona with negative humidity so...

Meh. If you want your garage to smell nice, then leave them uncovered. If you want moist ribs, then wrap them after you rub them. It was okay.
