Default Deer roast...souse vide style

I put this in the souse vide in sunday. Cooked to an internal temp of 130 the. Stuck it into the fridge. Got it out tonight to slice, finish and eat. About to stick it on the cast iron skillet for about 30 seconds per side. This is the before pic...

I am pretty stuck in my cooking ways but you damn near have me sold on trying this method. Looks really good.

Main thing it to not souse vide it too long. It can get mushy if you do. But I’ve been amazed at how tender deer gets.
