Crispy Grilled Spanish Mackerel
It's essentially oven fried but on the grill and turned out better than I expected. This may also be a good alternative for anyone who likes fried fish but whose DR said to stay away from deep fried.
Preheat grill on medium/high- high heat.
Dip filets in egg
Toss in breading (whatever you usually use for frying. Mine is 1:1 flour and cornmeal with a little Everglades or Everglades heat).
Lay out on a pan and brush the tips with oil (butter would have probably been better but I was out).
Place oiled side down on grill and brush the other side with oil
Cook 4-5 min per side being careful when you turn it to not scrape the breading off.
Mine went well with the leftover broccoli and yellow rice I had in the fridge.
