Default Cold misty cook!

Cold and dreary day here in Navarre! So I had a 13 pd CAB Choice brisket( from the butcher shoppe) wet aging in the beer fridge for about 20 days ish ,so pulled it out last night and injected. Hit with SPOG heavily and some commercial competition specialty rubs this morning. Cooking at 250 over oak and pecan splits. Also gonna throw on a fatty later to make beans. And the BBQ will be delivered to wife's work tommorow. Also Jordan at butcher shoppe said their gonna have some great deals again on prime rib sometimes around thanksgiving! More pics later throughout the day!

Aprox 5 hours later, internal temp 165 ish, now in the pan with some more of the beef injection in the bottom, covered with foil. Popped in the oven to finish. Now waiting till she probes like butta! Hopefully between 190 and 210! Then a long rest afterwords
