I posted this in the surf fishing forum. I made a marinade for pompano that was extremely tasty. Last night I tried the same recipe using Wahoo and was equally impressed.
Use a whole bag of fresh celentro, mix it in a food processor with a small stick of butter melted, a small tomato, a couple banana peppers, salt pepper, and some garlic salt. Add a little olive oil and blend it. Keep adding a little oil until you get a nice liquid that you can put in a bag with a pound or two of fish, cut in fairly small pieces.
Cook in a rectangular pan lined with foil and or parchment paper at 375 to 400 for 15 to 20 minutes. Add tomatoes, cut up peppers or other veggies for roasting in the pan. Spray the veggies with oil and sprinkle salt on them.
I put the pan on the top shelf of my grill.
