Default Campari (R) Tomatoes and Shrimp Po-Boys

I was in Sam's Club on Thursday, thinking about what to do with some leftover fried shrimp from Wednesday night. I decided on shrimp po-boys.

I bought Sam's twin pak of French Bread, a box of Campari tomatoes, and a couple of heads of lettuce, took things home and built sammiches with the cold shrimp.

Seriously, the tomatoes are the best store-boughts I have ever had. The soft French bread was reminiscent of N.O. french bread. Great Sandwich fixins. Seasoned only with salt and pepper.

The shrimp were 24 count no-peel, no-tail from Perdido Bay Seafood. I had washed them in buttermilk and dredged them in a mixture of flour and homemade Emeril's Essence (1/4 cup of essence for each cup of flour) and fried them in peanut oil at a drop temp 360F for 3-4 minutes.

Easy-peasy and better than any local restaurant shrimp po-boys I've had.

sounds good. there's a bar/grill/baitcamp just up the bayou from my house that makes a killer shrimp po boy. they have two sizes and they call the big one, "The Big Nasty"!

Louis' bait camp on Hwy 6?

When I lived over that way, Clary's was my favorite.
