Default cajun rabbit dumplings

read a thread on one of the sites over here about squirrel dumplings and got me to drooling. don't have any squirrels, but have some rabbit. made like regular chicken and dumplings, but based on a light brown roux and rabbit with some Tony's in the dumplings for a kick. made way more than we can eat, so i froze bout half. i'll take it to the deer camp.

Looks good.

We were talking about that today, you hardly ever see rabbits anymore. I can't even remember the last time I saw one. When I was a young teenager back in the 60's they were everywhere. It wasn't nothing to go out to the orange grove & kill 6-8 rabbits. We figured the coyotes was eating them all.

I made a quarter a piece dressing them.

$0.25 @! that's a bunch of stink for a little nuthin. Lol. no body hardly hunts em anymore. we have a pretty good population on our lease(cotton tails) and we spot light em. we let the young un's do the shootin. have to wait for the really cold weather though. still manage to put a dozen or so in the freezer. cut em up and soak in a brine for 24 hrs and they're good any way you want to fix em.

Back in the 60's a quarter would buy what a $5 would buy today. A 16 oz soda was only 6 cent. candy bars were a nickle.

A 16 oz soda now is over $1.50
