Default Cajun Boil Help!

doing a cajun boil (a la Wades) hints or suggestions for ingredients are needed!

I will do the basics, shrimp, sausage, potatoes, onions, mushrooms



Spices?



other ingredients?



may go to get some mudbugs too!

Throw in whole garlic 4 or 5, and believe it or not, broccoli stalks turn out awesome!!

Not sure what spice mixyou use,but the "swampfire" mix has giving me the most compliments for crawfish.I personally dont use cajun spice mixes(red powder mixes)in shrimp boils,I only use boil bags and old bay seasonings for mild spicing.

cut up some carrots and throw them in there too! they turn out awesome!

as far as "boils" go.. swamfire is probably the best around! i like to take the dry boils, add some salt, add some concentrated boil and mix up.. put a few cups of the mix in the water and bring to a boil. put 5 - 7lbs of crawfish and top the boiling basket off with the side items. drop in(grab a beer)and bring back to a boil for 3 to 5 mins, just long enough to get the potatoes to cook all the way. cut the heat off and socialize with your buds while the food soaks up the spices. the longer it sits, the spicier it will be. after about 10 - 15mins ring the dinner bell(grab another beer)and throw everything out on the table. as soon as you put the food out, while its still too hot to put your hands on, turn the flame back on the burner and start reheating the water to a boil. that way you dont have to miss out on eating too cause the food is too hot for people to scarf it down. eat, enjoy and start process over. also add a few more cups of the mix each time you turn the heat back on.

this is the way i do it cause crawfish boils at my house are whole dayEVENTS with a bunch of close friends so i want them to go on as long as possible! doin small amounts at a time will make it last all day and everyone will have a blast!

and if you want to cut down on the cost, tell your buds to each bring over $5 and a side item.make a list ofeveryone you are asking to come over and tell each of them what you want them to bring(potatoes, corn, sausage, shrooms, ect..) now you have cut down on how much money you are gonna spend &everyone has a blast and gets full all day for around $10!!

We usually keep a tub filled with water next to the boil pot and right before the pot goes in we throw a bunch of ice in for a rapid cool down to keep the shrimp from overcooking. A little or a lot of cayenne pepper will help boost up the heat level just a tad too. When is this boil takin place by the way? :hungry
