Default Baked Mingo again

This is tonight's dinner just before I popped it into the oven. Next time it goes into the BGE for a litter smoky flavor.

BGE all the way!!!! I've never prepared the whole fish that way...I reckon after baking the skin just peels off though huh?

I can't seem to get the pic thing squared away between my cell phone and PFF, thanks for turning them right side up. Skin peels right off using a fork tine, with the edge of the fork you can scoop the dark meat off if you want (when the fish is fresh the red meat doesn't have a fishy taste so I leave it and eat it too), when the top portion of fish is gone, lift the tail up and the whole backbone will lift off the bottom half, I just pick the bones out but if you don't like doing that use a fork tine to lift them and just pick them off.
