Default Almond Crusted Lemon Bars

Almond Crust Lemon Bars

Preheat oven to 375

Crust
2C flour
1/2C almonds, finely chopped

1/2C powdered sugar
2.5 sticks of softened butter
approx 2T of water

Mix well by hand, press into buttered 9x13 baking dish
Bake at 375 till lightly golden brown

Lemon Filling
1/2C flour
1/2t baking powder
Combine and set aside
4 eggs
1/2C lemon juice
zest from 1 lemon
1-3/4C sugar
Mix well and then combine well with dry ingredients
Pour atop crust and then bake till lightly golden brown
Top with powdered sugar/slivered almonds or cool thoroughly and top with powdered sugar glaze/almonds

Not too shabby for a first run.
I'm gonna tweak the recipe some more, I want a nuttier crust and tarter lemon filling.


Maybe change to...


Crust

1-3/4C flour
1C finely chopped almonds
1/2C powdered sugar

Lemon Filling

1-1/2C sugar

Not a huge almond fan but I'm sure pecans would be great....maybe even pistachios!!! I love me some lemon bars and those look purty dern sporty....


Gonna make you eat your heart out this week brother (don't think I have seen you make any)... been hankering fer some smoked fish dip, so after my treatments today/tomorrow I'll be making some!!!

Any nut is great, almonds are a favorite of mine and not too expensive, pecans and walnuts work just as well, pistachios are fantastic but da'bomb are Macadamias
I haven't tried hazelnuts yet.


Nope, you haven't seen me post up any smoked fish dip.
I do make it, sometimes from smoked, sometimes from grilled, but one thing is for sure I like it spicy and on Triscuits.
