Default Nice Mingo and Trigger

Got out Friday looking for wahoo. No love. Got a nice mixed bag bottom fishing including the biggest trigger I have ever seen and a haus of a Mingo.

Mingos are the best eating snapper in the Gulf. Not real sporty to catch but perfect to put in the freezer. Easy to clean. I have started just filleting them and leaving the skin side attached. Versatile that way. You can grill on the half shell, or skin them for pan sautee, or skin and chunk for fried. Any way you slice it, mingos are meat!

Sweet! Yes, Mingo and Trigger are two of the mother tasty critters in the sea. And tina and wahoo and Mahi and lobster. Ooh, the lobster!
