Default Sunday Morning Pomp

Took a break from working on the boat and went surf fishin... got to the beach right after daylite, and snagged this little guy about an hour later.

Nice!:clap I went for a walk with the wife on beach this A.M.. surf was rolling hard. maybe i'll try it this afternoon.

Good catch - but - Dude if you fry Pompano the "iron" chef squad should raid your fridge and fix it right for you.



Hot Grill

Do not skin the pomp fillet remove side bones if you wish two small slits and they'll pop right out.

2 TBS herbed olive oil

2 Tsp minced fresh herbs of your choice (dill, chives, thyme) for me

Salt and pepper to taste



Mix olive oil and herbs together sit for 5 min - put pomp on the grill skin side down (if you hit the skin side with a bit of olive oil it won't stick baste with oil hit with salt and pepper now. Wait 3 min baste again, done 5-7 mins (Side of pomp heat of fire BUT do not overcook for lip smacking good. Works best with a covered gill to get the heat about 300-375 inside.
