Default Recipe

Anyone have a good one for pomps. I went out to J. beach this morning and caught my limit of them. Sorry no pics, my phone died from not being charged

I do them the same way I do most others. Put 3 parts flour to 1 part corn meal, add your desired amount of creole seasoning, fry to golden brown. Not very original but it works great for pomps too.

Grill whole with skin on... cut slits vertically along his body. Add lemon and a lil soy. When you can pull the peck fin out easily, its done. Remember to get the meat on the top head portion... kinda like the jaws of a grouper; tender meat
