Default Redfish/trout fishing

My wife has tobe inthe Niceville/North bayarea in a few weeks for business, and I'm gonna bum a free fishing vacation off of her. That is, if some of you kind gentlemen will tell me where I can launch my boat, good place to fish, bait/lures, etc. I fish the MS coast for reds and trout with DOA shrimp, cockahoe minnows, gold spoons, etc. Are these the lures you guys use? Also, any specifics you can give me about where to fish and launch my boat would be greatly appreciated. Online map would help too. Thanks!
