Default 12/3 White trout trip

Well the lady and I took a spur of the moment trip last night. Loaded the little boat up and headed to 3M. Found a nice spot to anchor around 9-9:30. At 11 pm her reel fell apart. I mean bearing went everywhere. So now I need to buy her a new one but at least I can attribute the failure to hauling in the fish!!! 70 white trout! 1 was used for cut bait and 3 put in the crab trap. 66 came home with us!!

Nice haul, I bet your wife had a blast!!!
I really enjoy the taste of fresh fried white trout but they do not thaw well after freezing and taste very strong so, I only keep what I can eat in a 3 day window and since, white trout are easy access, I use the 3 mile as my freezer / white trout storage.
How do you freeze, thaw white trout to make them taste good?

I gave quite a bit to co-workers and kept some for me yo eat over the next few days. I’ve never tried freezing, however, I do have a friend that has it down to an art. It’s actually a complete process. Fist the fish are put in ice water as soon as they are caught. (Must be ice water not just ice) then he pulls them out just long enough to scale and filet. And the filets go straight back in ice water. He swears that you can keep them with ice and water for two weeks, but also states that water alone in the fridge isn’t quite cold enough. Then if he wants to freeze any he spreads them on a cookie sheet and freezes for 1 hour. Then dips them in the ice water bath to glaze them over. And immediately freezes. Then he re glazes at least once more so each piece has a nice ice coating. Then bags them up and tosses in the freezer until he’s ready to thaw and cook. I’ve never done the process but I have ate his freezer trout and they taste close to fresh as I’ve ever had.
