When I first started using Matrix last fall lemonhead, or bright green, was the ticket. Caught everything on them including a red snapper and two amberjacks. Couldn't believe all I was catching. This summer my go-to has been violet for specks, spanish and an occasional flounder. Creole has done OK. I haven't fished the new colors yet, but they sure look good.
I fish it just fast enough for the tail to waggle, unless I see surface action...then I keep rod tip up and reel faster to keep it near top. Steady retrieve mostly just like a swim bait.
