Default Inshore and Nearshore Charter Recommendations in Pensacola and Orange Beach?

I had a trip booked to Destin starting next weekend for a week, and it just got cancelled, due to the hurricane. It was our first trip to the Gulf with my new bay boat. I know a few captains in Destin, so I booked one to take me out on my boat for 2 days, to show me around, teach me how to navigate the bay, how to look out for sandbars, oyster rakes, etc, and to put me on fish. He was also going to teach me how to bust the pass into open water, if the water was calm enough one of those days, and do a little fishing near/offshore. I planned to come down alone and spend those few days learning and fishing, and my wife and 3 kids were going to join me midweek for the rest of the week. With little kids, as much as they love fishing, they need more to do to keep them interested. In Destin, there were multiple restaurants on the water, Baytowne Wharf, etc, to keep everyone happy all week long.

It looks like Orange Beach and even Pensacola may offer some of the same things. I've looked online and found a ton of houses in the Perdido/Orange Beach area, many along the Old River, where they have their own docks to tie up to, which is what I'd prefer.

I'm hoping to get some good recommendations of a good captain who would be willing to do this on a per hour basis on my boat, so I can keep my trip, but move it to Orange Beach or Pensacola instead of Destin. Any good recommendations of charter captains that could help with both the inshore and offshore, and be willing to teach me as we go?
