I've always hooked them by the back, under a popping cork.

Depends on how you're fishing it, under a cork you can do lips or the back. If on the bottom you can do through the lips, but I personally like to go about half an inch behind the dorsal fin. I find a better ratio of hookups with this technique.

Don't put your hook through the bait or its mouth. Put it through the eyes or nose unless you want to change your dead pinfish every 10 minutes. A lively pinfish with it's natural colors will outfish a dead one 9 out of 10 times. You start putting holes in them and they turn white, think about how much blood is in that little pinfish body, even losing a drop or 2 will kill it in minutes and it won't be able to breath with a big hook in it's mouth. On grass flat you can't go wrong with a popping cork though, just make sure the leader is the proper length for the depth you're fishing.
