I had some spanish in the freezer from a 8 pounder i caught last week so me and the girlfriend decided to have a lazy day and cook up some fish tacos. I googled a bunch of ideas and suggestions on the best seasonings/ways to cook. I ended up putting them on a pan and putting them on the grill. I love the hickory taste that charcoal offers plus i just enjoy a beer while grilling. Makes me feel manly . I'm sure there are tons of threads about cooking and what not but i wanted to see what everyones preferences and favorites were. Cooking the fish is just as much fun as catching them to me so the cooking lessons are just as valuable as the fishing lessons.
End product with the sauce after my favorite seasonings.

My motto is anything tastes better with charcoal and beer!
Nice looking fish you did might try brushing them with olive oil then adding your favorite seasoning.
Can't go wrong.
