we put some cobia and trigger fish on the big green egg tue. night.







we broke out the fine china and pigged out!!

i can't give all the details but here are a few. olive oil (from shoreline. it makes a BIG difference) chef pauls red fish blackening, garlic powder and another special rub we put on there. i also use the oak wine barrel chips to give a very nice mild smoke flavor. since we have "mastered" the art of grilling fish on the green egg, we hardly ever fry fish anymore. that used to be the ONLY way i wanted my fish!
