Default snapper throats on the egg again with pics

before

during

and after

boys, if you are throwing the heads over without cutting out the throat you are missing the best tasting white meat on the planet. itonly takes anextra two minutes to cut out the throat.cut it out , leave the scales on and place it skin side down. pour some oliveoil on the meat side or spray it with some butter flavored pam and rub it in. sprinkle it with your favorite seasoning and put it on the grill skin side down. it will be ready when you attempt to take it off and it wants to split down the middle bone. take it off and let it cool fir a few minutes. its like pulling pork but it is red snapper. it will fall off the bone.

It is almost a lost art. Even in some of the older wharf areas, the quantity of fillets that come through cause many to disregard that primo piece. Good job!

I use diagonal cutters to get them out easily. They are awesome. You can get good throats from any of the fish you would normally eat.
