Default Side-by-side Ice Maker problem...

I have a high end Viking side-by-side Refridgerator Freezer that has an ice dispenser in the door on the freezer side.

It works fine about 60% of the time, then it'll start to dispense ice but it'll jam up at the flapper in the door.

I notice I get a lot of hollow ice cubes too, don't know if it's related.

My old Kenmore in my old house did more or less the same thing. It appears the ice-maker and dispenser is a pretty common unit and certainly not a "Viking" exclusive product.

By the way, other than that it's a great unit though WAY to much money up front.

I've looked on the interwebs with no good solution... Any ideas?

Sounds like it is dumping the ice too soon. That would explain the hollow ice as well as the jamming. The leftover water may be pooling and freezing in the bottom of the ice tray, that would explain the clog. You may need to bump your freezer down a few degrees to compensate for wear and tear on the seals and such.

Probably unrelated to your problem, but my side by side ice maker quit working and also didn't deliver water to the door dispenser. I bought a part for it and replaced it before realizing it was just iced over water where the water comes into the icemaker. It was jamming up the works. Took a hair dryer to it and havn't had a problem since

Maybe try setting the freezer to a colder setting? Sounds like it's not completely frozen and then the moisture is getting to the flap and THEN freezing.
