Default I have found the best smoking wood ever!

A buddy gave me a birch log and said I should use it in my smoker. Well, yesterday I sliced it up and used a few pieces to smoke some chicken quarters. WOW. That junk is amazing. If you ever get your hands on some, get it and use it. You will not be disappointed. Wish I knew where to get some around here.

There is a guy in Cantonment that sells it. He's on 29 by the paper mill

Birch is considered a fruit wood. The sap is a lot like maple syrup. They used to make birch beer out of the sap.

After yrs in the usaf i found that my favorite wood would be mesquite it is an incredbly hard wood and is said to generate the highest btu's i don't know about all that but love the flavor it gives meat . Curious as to what it will do for fish.

Try mock orange sometime (bodock, osage orange, hedge apple), burns REAL hot, great for red meat grilling or blackening on the grill.

I love birch for that sort of thing. Nothing beats the flavor it adds. It's hard to go back to using an oven/microwave after that!
