I'll be the devils advocate here since everyone posting is only putting in good inputs minus the franchise post.

Maybe I have always thought cajun food was spicy. The more I eat food made by cajuns, working on the workboats in the oilfield, the less I like the stuff. If I make red beans and rice or a gumbo they think it is to hot. I think thier food taste like brown water with some kind of flavor in it.

I've ate at places in HOMUA that thinks adding bay seasoning on the top of the food is the thing. I've had Badazzchef's jamblaya and gumbo and it was better then any canjun food I have ever eaten by a cajun. I have eaten at one sandwich shop in Homua that was pretty good. Only place I have eaten twice at in Homua.

Never tried Jerrys Cajun food so can't comment on it. I need to wonder over there one day and give them a shot but have always been disappointed with this CAJUN thing.

I personally wouldn't eat there unless I heard from someone that you have some spicey food offered on the menu. I mean, I've been here in P'cola for 8 years almost and haven't been over to Jerry's Cajun cafe so most likely wouldn't visit a fast food place either.

MAYBE it's because I like to cook and just make my own to my taste. I don't know. Like GUMBO.. I like the sauce to be a little thick and have flavor also but all I have ever had besides Badazzchef has been watery ( Is that a word???) no flavor in the sauce. Most folks I see making it use the quick fix Roue instead of making it from scratch. Even the cajuns on the boat do this and they catch hell from me about it. You can just taste the difference in the sauce. MOST resturants will take the quick and easy way when doing this and IT JUST PLAN SUCKS. It should be an embarassment to a cook and especially a chef by using the quick or premade roue.

I appreciate your input!

I will admit, I am a little girl when it comes to spicy foods. I usually just get the "hot" hot wings at a wing place. Never the 911 or crazy stuff like that.

Saying that, their drunken and voo doo chicken is pretty damn spicy, clears my sinuses! I went over some numbers last night and they are doing VERY well. None down your way but the ones in New Orleans are off to a promising start.

I will for sure be looking into your area. I just asked about the GB spot as I found a unit open. I am also most familiar with GB area and know that little section of 98 there is jam packed, especially during the summer.

With my input, if it can be called that, best of luck on your adventure. I personally think it will work because there is nothing like it in this area that I know of and folks like that CAJUN auroua.

Ijust don't find myself going to it unless it was something special and with fast food and franchise titles it just turns me off. Like I said though, I think it would do good over here as a business stand point.

I completely understand and agree. The competition however is not the little mom and pop shops. Its the McDonalds, Taco Bells, Subways, Quiznos type places. Think of it like a Subway with the way you order and price but with big hearty bowls of cajun inspired dishes, flat screen TVs and ice cold beer if youd like!

It really depends on who runs it and who cooks the food.If it would be owned by either Cajun peolple or at the least some one from the southeast, I would say yes, but I would have no interest in steamed crawfish with old bay sprinkled on them, or undercooked grits with no salt.

If it's authintic yes, everyone should stick to what they do best and there is no place in the culinary world of cajun cusine for a yankee.:letsdrink. No offense to the yank chefs I know several very talented northern chefs and cooks, but I would'nt ask them to make me Jambalya or red beans and rice and for sure not any kind of seafood that is from this area.

OH, with your last post.. Yes, I would most likely eat at your place before the others. Come up with a Cajun hot wing and I would most likely be in like flynn on sports days. Beer, flat screens and chicken wings. :usaflag LOL!!!

Good luck. No more input from me.

The commissionary, where all the food is prepped, is ran by a chef from New Orleans spcializing in...well of course, Cajun cuisine! This is something rather unique to us compared to our competitors. The food is not distrbuted until the chef okays every thing. There is no Mexican chef ensuring great tasting food at Taco Bell (yuck justgetting sick thinkign of TB), there is no Jersey born sub man making your cold cut, and there is no seafood chef at Captan Disease (again...YUCK).
