Default When to Fish ?

I know many people will say any time but I do not want to get burned out on the wrong time to actually catch fish.
I am an old novice only fishing a bayou so give me some advice.
Is every morning good ? and the fishing charts not so much to go by?
This is everything I go by right now and only using 2 baits.

I like to fish when the tides are moving. I like different spots for incoming verses outgoing. I like to fish around the mouths of creeks, rivers ,bayous, etc, on an outgoing tide . On an incoming tide I like to fish flats and pockets or shallow areas that are getting deeper with the tide.
Now as far as early mornings go. In the summer months I prefer fishing early. In the winter, I fish banker's hours 9-5.
