Default Smoking fish

Iím sure itís been posted on here before but Iíve missed it.
Got a few questions.

1: How to

2: Can you do it on the egg?

3: Can you smoke freshwater fish like perch and catfish?


Saw a post on smoked spoonbill and it got me thinking.

I smoke all sorts of fish on the egg. I make up a light brine and only use citrus wood. Never tried any freshwater species.

I use brown sugar and a few tablespoons of kosher salt. Here is Bobís old thread with his process:

I really prefer using citrus wood though. Great flavor on Mullet, redfish, pompís, ling and wahoo. Smoked a marlin loin with grapefruit wood for dip last year. It was really good.
