Default Shark fishing in the choctawhatchee bay

Hey guys my family has a cabin on the Choctawhatchee bay that has been in the family for 4 generations and we have always enjoyed fishing out of it. My grandfather (grandson of the man who built the place) used to do some not so legal fishing methods when I was a boy, like gill nets. And one morning me and my bother went to check his nets and there was about a 3 foot shark caught up in it, ever since then I have wondered how I would go about catching one on a rod and reel. Well me and my brother plan on trying very soon. Is there anyone out there who has done this before or knows what kind of bait and tackle we should use?
