Just about any kind with firm white meat. I also like to use shrimp.

I gotta say I've NEVER had Ceviche.

I'm not a fan of Sushi/Sashimi either, but I'll go if somebody wants it.

Cold fish just doesn't do anything for me, though oysters and clams are great. So is cold steamed shrimp.

I just cannot "get" cold fish soup in an oil, vinegar, and citrus fpr a couple hours to "cook" it.

I'll try it, I'm sure it is at least "fine".

But can anybody provide a recipe?

The wife and I just finished off some lobster and shrimp ceviche we made sunday. It was delicious. Shellfish makes the best ceviche.
