Like any mackerel, not well at all. HOWEVER, smoked king freezes great.

turns to mush when you thaw it out. eat it right away or make smoked king dip and you can freeze it in vacuum sealed bags to take on later trips.

I boil the meat in crab boil. Make crab cakes out of the meat. Then freeze unused crab cakes. They last about a month with good flavor. But definitely best when fresh.

Freeze it all the time, just like any other fish. Freeze it dry, without water, if storing for a short time. If longer freezes are necessary freeze it in whole milk. Had some frozen king Friday night, it was delicious, not even close to mushy.

I don't have an issue when freezing either. I do vacuum freeze and de-thaw in COLD water. The hot water WILL turn it to mush.

I just pat the pieces dry and then vacuum freeze them. Always froze them and brought them back to GA to smoke without any issues.
