FishAddict (10/6/2009)Don't be afraid to try spanish mackerel. If you cut off the skin and red meat, and keep them cool they are quite tasty. Not as good as snapper or grouper, but cooked properly very good to eat. By the way, that was probably a white trout, if it had spots a speckled trout. You need to get a size/limit chart so you know what you can keep legally.
Love me some spanish mack , Im not a good cook. I fry everything in peanut oil and zatarains and it comes out tasty.
