Default Fresh pompano for Christmas dinner

Had a friend cook a fresh pompano for our dinner tonight. And it was all the way up in St Louis.

That was some of the best fish I have ever had. She is a gourmet chef. Her brother/Uncle owned Skopilos.

How do you get "Fresh" gulffish up there? I guess I'm spoiled, have to eat as soon as we get it home from the water. Whats the lenght of time fish is good on ice or cold? Maybe the've figured it out? C'mon down in the spring & get some really fresh & kicking! Say April.:letsdrink

i grew up eating the traditional christmas dinner but in the past few years we have started trying new things. Last year we ate snow crab legs and this year we cooked steaks! Pompano sounds like a awesome christmas dinner!

I think it was caught on either W-day or Th-day of this week. She broiled it and we had it cold along with grilled lamb chops.

Will be down this spring or summer, sister just bought a place in Fairhope. They are down there right now.

I hope to make it to PFF party someday. I can bring some beer, I get it for $8.00 a case at work. :letsdrink

C'mon down in the mid tolate spring, Spanish Mackeral, Kings, tarpon, Cobia, Pompanos, Reds, Flounder, trout, Sheepshead . Thats on the beach & inshore. Not to mention whatsOffshore.:letsdrink
