One more thing to consider, budget. How much boat do you want to commit to?

Much as I'd love a bigger boat, our 24 will do for us as long as it lasts.
All of the above comments ring true to me, plus think about the future.
Fuel costs aren't going down any time soon.
If you are fishing and need an extra 6 feet, it's probably too rough to have a good day offshore anyway.
I fish with a buddy who has a 32 foot Stamas. Yes the extra hull and weight are a comfort when we are out at the rigs. It's a great fishing platform. But it takes two or three guys to launch and manage that boat.
All in, he would be better off chartering a boat for the cost and time it takes him to get his ready to roll.
2 cents of input based on way to much experience

Thanks, that's the kind of input I needed. I am actually in negotiations and waiting back on the final number for a 31ft. I may just stick with the 25ft especially if he comes back with too high of a number for the 31ft. I currently own a 25ft Sea Hunt with twin outboards. I was negotiating a trade.
